Brewing Guide and How it's made?

Ideally, use paper-filtered drip or similar to trap the LDL-raising oils and keep your caffeine earlier in the day; skip or limit unfiltered methods if LDL is a concern. Brew ratio 15:1.

We create each level by mixing washed, high grown, arabica coffee with naturally decaffeinated washed coffee (chemical free sugarcane method) to a specific percentage.

It's craft coffee, calibrated.

What level is right for me?

If you’re new, start at 50% for smooth focus, then nudge up or down. Sensitive to caffeine or chasing better sleep? Try 25% or 0% in the afternoon. You can also sample the spectrum with our starter kit and find your rhythm fast.

We’re the team behind Stone Creek Coffee, a Milwaukee based roaster and retailer. We built Control Freak for people who love coffee but want to fine tune their caffeine.

Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

Flat filter grind is a medium grind with a consistency like sea salt, ideal for flat-bottom drip brewers, promoting even extraction and producing a balanced, smooth cup of coffee.

Chemex or Kalita

Chemex grind is a medium-coarse grind, similar to coarse sand, designed to ensure a slower extraction and clean, bright cup with pronounced clarity and delicate flavors.

French Press or Clever

French press grind is a coarse grind, with a texture like breadcrumbs or coarse sea salt, allowing for full immersion brewing and producing a rich, full-bodied cup with minimal sediment.

THE FARM

The municipality of Ancuya, founded in 1534, is located in Huila, Colombia, and has a culture shaped by Spanish and indigenous traditions. Its economy is primarily agricultural, with sugar cane being the main crop (2,500 hectares) used for panela production. Coffee is a distant second (230 hectares) and is only grown in 15 higher-elevation townships due to climate change and the borer beetle.

Approximately 2,300 farmers work in Ancuya, typically managing one to three hectares. Azahar Coffee partners with a couple dozen of these farmers, blending Castillo and Colombia varieties from several veredas. The coffee is grown at an altitude of 1,500-2,000 meters, with a fermentation time of 18-24 hours and a drying time of 10-15 days. Farmers are paid 2,169,562 COP per carga.

The Guáitara River irrigates Ancuya's farms and separates it from neighboring municipalities. Additionally, many female-led households in Ancuya preserve the ancestral tradition of weaving goods from toquilla palm fibers.
